After storing the juice in an outside tank, natural fermentation occurred. The result of this experiment is a brilliant gold wine boasting of orange blossoms, stone fruits, honey, and fig newtons. This well balanced ice wine has a palate full of honeyed apricots and peaches, with a very long citrus finish.
